Before being diagnosed with Celiac Disease, Flakely founder and Executive Pastry Chef Lila Colello worked for Wolfgang Puck, The Food Network, and some of the country's best restaurants.
Her diagnosis changed everything — but not her standards.
Unable to work with flour and unwilling to live without croissants, she made it her mission to create French pastries that are taste-identical (and texture-identical) to their wheat-flour counterparts.
Chef Lila crafts her own versions of the pastries and breads that gluten-free foodies miss the most — and Flakely is one of only a handful of gluten-free bakeries in the world to master the technically difficult GF croissant.

Flakely is proud to partner with the South Philly Community Fridge Program, providing breads, bagels, and pastries free of charge on a weekly basis at all of their locations. Because everyone deserves to eat food that is safe for them.
