About Chef Lila

Before being diagnosed with Celiac Disease, Flakely founder & Executive pastry chef Chef Lila Colello worked for Worlfgang Puck, The Food Network, and in some of the country’s best restaurants.

Unable to work with flour, and unwilling to live without croissants, she made it her mission to create French pastries that are “taste-identical” to their wheat-flour counterparts.

Chef Lila works tirelessly to create her own versions of pastries and breads that gluten-free foodies miss the most. Flakely is one of only a handful of gluten-free bakeries in the world to master the technically difficult GF croissant!
